Meatloaf is comfort food. You can serve it up in slices with sides of pasta, salad, rice, or vegetables any day of the week. Leftovers? They become sandwiches, of course.
The beauty of meatloaf is you can play with your food a bit. Add in some chopped green pepper, or for a hint of heat, minced banana pepper. Separate the raw meatloaf mix into two bundles, putting one in the pan and topping it with cheese, followed by the rest of the mix. Use honey instead of sugar in the sauce.
