Cucumber Raita (Cucumber & Yogurt Dipping Sauce)

This condiment goes spectacularly well with spicy chicken dishes, and is commonly served at many Indian restaurants. This recipe only takes 5 minutes to make.

Ingredients

  • 1 large cucumber, peeled and grated, juices squeezed out
  • 1.5 cups plain Greek yogurt (high fat, 2-5%)
  • Juice of ½ lemon, zest of 1 lemon
  • ½ tsp whole cumin seeds, toasted
  • ½ tsp garam masala spice powder
  • 1-2 tsp salt, to taste

Instructions

  • Peel and grate the cucumber.
  • Squeeze out the remaining juices from the pulp, discarding the liquid that is squeezed out but reserving the pulp.
  • Mix the cucumber pulp with the Greek yogurt, lemon juice, lemon zest, toasted cumin seeds, garam masala, and salt to taste.
  • Serve Cold.

Notes

This condiment can be tailored to whatever dish you are serving. If you are serving a chicken dish with lemon, capers, and black pepper, try incorporating some lemon zest, minced capers, and freshly-ground black pepper into the Raita!
If you like adding small diced chunks of salted cucumber to this sauce, feel free. I recommend salting the diced cucumber in advance and allowing them to drain to remove some of the excess moisture and flavor the cucumbers.
