-1 package soba noodles
-3 cups purple cabbage, shredded
-1 cup snow peas, chopped
-1 cup carrots (thinly sliced)
-1 cup bell pepper (thinly sliced)
-2-3 chopped green onions.

-crushed peanuts for garnish

For peanut dressing
-5 tbsp smooth peanut butter
-5 tbsp water
-5 tbsp soy sauce
-1 tsp rice vinegar
-2 cloves minced garlic
-1 tablespoon honey
-juice of 1 lime
-3 tablespoons sriracha
-1/3 cup of peanuts

Optional garnish: sesame seeds or black and white sesame seeds for decoration on top of salad.

Instructions
1. Cook soba noodles according to package directions.
2. Drain and rinse with cold water to stop cooking.
3. In a large bowl, combine cooked soba noodles, and sliced vegetables.
4. Place in refrigerator to chill while you prepare dressing.
5. In a blender, put all the dressing ingredients, except the peanuts. Once the dressing is well combined, add the peanuts for a few seconds (this will keep some peanut chunks).
6. Drizzle over chilled noodle mixture and toss gently to coat. Serve immediately or refrigerate for 1 hour before serving.
