Prosciutto Caprese Skewers
This is the perfect finger-food item to serve up at a family gathering or BBQ as an appetizer.
Ingredients
- 24 mini mozzarella cheese balls
- 12 slices prosciutto, sliced very thin
- 36 whole grape tomatoes
- 2 Tbsp extra virgin olive oil
- ¼ tsp dried oregano
- Salt & freshly-ground black pepper (to taste)
- 36 basil leaves (roughly-torn into stamp-sized 1x1” pieces)
- 12 skewers (6” long)
- 2 Tbsp balsamic glaze
Instructions
- Cut each slice of prosciutto in half.
- Wrap each mozzarella cheese ball in half a slice of prosciutto and set the prosciutto-wrapped mozzarella balls aside.
- Toss the grape tomatoes in a bowl with the olive oil, a pinch of dried oregano, salt, and freshly-ground black pepper.
- Assemble the skewers with 3 tomatoes and 2 mozzarella balls on each skewer, alternating between tomatoes and mozzarella balls.
- In between the tomatoes and mozzarella balls, add a few torn pieces of basil.
- Arrange skewers on a platter.
- Drizzle lightly with the balsamic reduction, add a sprinkle of black pepper, and finish with a splash of extra virgin olive oil.
- Serve at room temperature, with napkins.
Notes
If you can’t find store-bought balsamic glaze, you can create your own at home with 1 cup of balsamic vinegar. Carefully cook the balsamic vinegar and reduce it down on the stove until it arrives at a syrupy consistency.
