Similar to breakfast burritos, you’re dealing with soft taco shells, eggs, and cheese for starters. You roll up the burrito, but the Quesadilla lays flat. Thankfully the melted cheese keeps your fillings firmly in place nonetheless. 

You’ll be happy to know these go together quickly. And don’t be afraid to add other ingredients. Chopped green pepper, a little jalapeno, different cheeses, ham, sausage, salami, chicken, salsa, and guacamole all add a little something to the creation you’re making. 

Personalize it! Set out various toppings and have family or friends order it as they wish (they’ll talk about this for weeks to come). Note: You need two large flour tortillas per person or four small ones, depending on hunger level. This recipe is for two large tortillas. When you’re having more quests, adjust accordingly.

Ingredients

  • 2 large eggs
  • 1/2 teaspoon salt and pepper
  • 2 large flour tortilla
  • 1/2 cup cheese (Monterey jack or pepper jack)
  • 1/4 cup crumbled bacon
  • 2 tablespoons white or green onion
  • sour cream

Instructions 

  • Using a non-stick skillet, scramble the eggs with salt and pepper. Set aside.
  • Lightly oil the pan, and bring it to medium heat.
  • Lightly toast the tortilla on one side.
  • Flip the tortilla, and sprinkle ¼ cup of cheese on top.
  • Follow with bacon and onion.
  • End with the last ¼ cup of cheese.
  • Add scrambled eggs.
  • Top with the 2nd tortilla, carefully flipping thewhole “sandwich” over so the 2nd side toasts.
  • Cut into quarters and enjoy with sour cream on the side.
