Mixed Fresh Berries with Mint & Lemon Whipped Cream
This light dessert is perfect to serve after dinner on a warm summer night.
Ingredients
For the berries:
- 1.5 cups blueberries (rinsed & dried)
- 1.5 cups strawberries (rinsed, dried, tops removed, and berries cut in quarters)
- ¼ cup fresh raspberries ( rinsed & dried)
- ¼ cup ripe blackberries (rinsed & dried)
- 2 Tbsp fresh mint (finely sliced)
- 1 Tbsp granulated white sugar
- ¼ tsp kosher salt
- ½ Juice of lemon
For the whipped cream:
- ½ cup heavy whipping cream
- 1 Tbsp granulated white sugar
- ¼ tsp vanilla extract
- 1 Zest of lemon
Instructions
- Clean, dry, and cut the fresh fruit.
- Coat the exterior of the cleaned & prepared fruit in the sugar, salt, and lemon juice.
- Allow the mixture to sit for 30 minutes.
- Toss the fruit mixture with the juices released by the fruit.
- Finely chop the fresh mint leaves and incorporate into the fresh fruit mixture.
- When ready to serve, prepare your whipped cream.
- Mix the heavy cream with the 1 Tbsp sugar and use a hand mixer to convert mixture into whipped cream consistency.
- During the last 5 seconds, mix in the lemon zest and fold together gently with a rubber spatula to combine.
- Serve the fruit with the juices in small bowls, and top with whipped cream.
Notes
If you are going to prepare the whipped cream in advance, chill the whipped cream in the fridge after making it.
