Spicy Cucumber Salad
This cucumber salad side dish goes great as a spicy accompaniment to grilled or roasted chicken or fish.
Ingredients
- 1 jalapeno pepper (seeds included, finely minced)
- 2 large cucumbers (peeled and seeds removed, cut in 1/8” slices)
- ¼ clove garlic (finely minced)
- 1/8 tsp ground cayenne pepper
- ½ cup Greek yogurt
- Zest of 1 lemon
- Juice of 1 lemon
- ½ cup fresh dill (chopped)
- 2 tbsp poppy seeds (toasted)
- 2 tbsp black sesame seeds (toasted)
Instructions
- To remove the seeds on the cucumber, cut the peeled cucumber in half lengthwise
- Use a spoon to scrape out the seeds from the center of each half.
- Cut each half into 1/8” slices
- Season slices with salt and mix gently in a bowl
- Allow to rest for 20 minutes.
- Drain out excess water after 20 minutes.
- Allow the minced garlic to sit with the lemon juice and lemon zest for 10 minutes.
- Combine the salted cucumber with the minced jalapeno, cayenne pepper, Greek yogurt, minced garlic, lemon zest and lemon juice, fresh dill, and toasted poppy seeds.
- Garnish each serving with toasted black sesame seeds.
Notes
The heat level can be augmented based on your desired spice level.
