Ingredients
-1 medium eggplant
-1/4 cup of white miso paste (miso paste is typically found in the refrigerator section)
-3 tablespoons soy sauce
-2 tablespoons sesame oil
-2 garlic cloves, minced
-1/4 teaspoons red pepper flakes
-2 teaspoons fresh ginger, minced
-Sesame seeds and green onion for garnish (optional)

Instructions
1. Preheat the oven to 425 degrees F. Prepare a baking sheet.
2. Mix together miso, soy sauce, sesame oil, garlic, red pepper flakes, and ginger. Set aside.
3. Cut the eggplant in half and score it. Slice diagonal lines throughout the eggplant, without cutting all the way through.
4. Pour sauce on each half of the eggplant. With clean hands, massage the sauce into the eggplant.
5. Cook the eggplant for about 25-30 minutes.
6. Finish with sesame seeds and green onion.
