Cream Cheese Mashed Potatoes
Cream cheese, butter, heavy cream, and roasted garlic unite with fluffy potatoes to create a delicious mashed potato dish.
Ingredients
- 3 cloves garlic
- 1 tsp vegetable oil
- 4 russet potatoes
- 10 Tbsp (1 stick + 2 Tbsp) salted butter
- ½ cup cream cheese, (softened)
- ¼ cup heavy cream, (warmed)
- Salt and freshly-ground black pepper, (to taste)
Instructions
- Roast whole unpeeled garlic cloves in 1 tsp vegetable oil, wrapped in foil at 350F for 40 minutes, or until the garlic is very soft.
- Remove garlic from oven and remove peels when garlic is cool enough to handle.
- Mince the roasted garlic and set aside for later.
- Peel and dice the potatoes and rinse under cold water.
- Put potatoes in a pot with cold salty water.
- Boil potatoes on medium-low heat until they are completely tender.
- Drain potatoes and transfer back to cooking pot.
- Add 10 Tbsp softened butter, ½ cup cream cheese, ¼ cup warm heavy cream, and minced roasted garlic and mash to combine thoroughly.
- Taste and season with salt & pepper.
- Serve hot.
Notes
These mashed potatoes taste wonderful when re-heated in the oven at 350F in an oven-safe dish with a lid.
