Ingredients

  • 6 Sticks unsalted butter (you can use less if you wish)
  • 3 Strip Steaks or Beef Flank
  • 6 Garlic cloves (smashed)
  • 2 sprigs rosemary
  • ¼ lemon (chopped)

Instructions 

  • Heat up the charcoal and wood until you have proper coals.
  • You want the steak to cook somewhat slowly.
  • Create an aluminum boat with high sides to contain the butter and enough length for the three steaks.
  • Melt the butter in the aluminum.
  • Place the steaks down into the melted butter.
  • Sprinkle the garlic and lemon evenly over the steaks.
  • Put a piece of rosemary between them.
  • Using a meat thermometer, watch for an interior temperature of 120 F.
  • Remove them from the butter.
  • Return the steaks to sear on the campfire for a minute or two.
  • You want a nice crust, but this doesn’t take long. Avoid over-cooking.
  • Let your steaks rest for 10 minutes.
  • Serve as desired.
