Ingredients For Shrimp Quesadillas
-2 tablespoons olive oil
-1/2 medium onion, diced
-1 red bell pepper, seeded and chopped
-3 cloves garlic, minced
-4 cups cooked shrimp (peeled and deveined)
-2 tablespoons taco seasoning
-6-8 whole-wheat tortillas or corn Tortillas
-1-2 cups shredded cheese
-2 tablespoons freshly chopped cilantro

 

How To Make Shrimp Quesadillas
1. Heat your skillet on medium-high heat and add 1 tbsp of olive oil. Sautee your onions and garlic for a couple of minutes until soft and translucent. Add bell peppers and cook an additional 2 minutes.
2. Next, add your shrimp and season with taco seasoning.
3. Cook for about 4-5 minutes until pink!
4. Remove shrimp mixture and set aside. Clean your pan and spray with cooking spray.
5. Place tortilla on pan, over medium-low heat, add cheese and shrimp mixture. Be sure not to add too much or your quesadilla will fall apart!
6. After 2-3 minutes, fold the tortilla in half. Flip and let each side get golden brown.
7. Repeat for remaining tortillas.
