Ingredients
-1 cup of rice
-1 can of chicken broth
-1 tablespoon olive oil
-1 medium red, green, or yellow bell pepper, diced
-1 medium white onion, chopped
-1 small jalapeño, seeded and diced
-1 can of black beans, rinsed and drained
-1 can of sweet corn, rinsed and drained
-1 can of diced tomatoes
-1 small can of green chilis
-2 gloves of garlic, minced
-Salt and pepper to taste
-Red pepper flakes to taste (for spice)

Instructions
1. Cook the rice in the chicken broth, following the package instructions.
2. When the rice is cooking, sautee the garlic in oil.
3. After 3-4 minutes add the diced onion. Cook until translucent.
4. Add the diced bell pepper and cook for 5-7 minutes. Remove and set aside.
5. When rice is done cooking, add the onion, garlic, pepper mixture.
6. Mix in the remaining diced and chopped vegetables and seasonings.
7. Serve and enjoy warm or room temperature.
