Cream Cheese Mashed Potatoes

Cream cheese, butter, heavy cream, and roasted garlic unite with fluffy potatoes to create a delicious mashed potato dish.

Ingredients

  • 3 cloves garlic
  • 1 tsp vegetable oil
  • 4 russet potatoes
  • 10 Tbsp (1 stick + 2 Tbsp) salted butter
  • ½ cup cream cheese, (softened)
  • ¼ cup heavy cream, (warmed)
  • Salt and freshly-ground black pepper, (to taste)

Instructions 

  • Roast whole unpeeled garlic cloves in 1 tsp vegetable oil, wrapped in foil at 350F for 40 minutes, or until the garlic is very soft.
  • Remove garlic from oven and remove peels when garlic is cool enough to handle.
  • Mince the roasted garlic and set aside for later.
  • Peel and dice the potatoes and rinse under cold water.
  • Put potatoes in a pot with cold salty water.
  • Boil potatoes on medium-low heat until they are completely tender.
  • Drain potatoes and transfer back to cooking pot.
  • Add 10 Tbsp softened butter, ½ cup cream cheese, ¼ cup warm heavy cream, and minced roasted garlic and mash to combine thoroughly.
  • Taste and season with salt & pepper.
  • Serve hot.

Notes

These mashed potatoes taste wonderful when re-heated in the oven at 350F in an oven-safe dish with a lid.
