Citrus & Prosciutto Salad

This citrusy, delicious salad is perfect for a warm spring or summer day.

Ingredients

  • 4 oz finely sliced Prosciutto or Jamon Serrano.
  • 4  large navel oranges.
  • 1  small shallot, minced
  • 2 Tbsp champagne vinegar or white wine vinegar
  • 1  tsp  Dijon mustard
  • 2 tsp honey
  • 2 Tbsp olive oil
  • 1 baby head of lettuce
  • Salt & Black Pepper
  • Toasted pistachio nuts, (chopped)
  • Finely chopped chives, (as garnish)

Instructions 

  • Zest and juice one orange, and whisk this together with champagne vinegar, Dijon mustard, and honey.
  • Season with salt a pepper.
  • Add your minced shallot and let sit for 15 minutes. 
  • Then whisk in your olive oil and reserve as dressing for later. 
  • Cut the tops and bottoms off the remaining three oranges.
  • Cut the outer peel and pith off oranges as well.
  • Cut the remaining flesh into slices shaped in rounds, with about 4 slices per orange.
  • Coat your lettuce greens and orange slices in the dressing, and arrange orange slices on top of the greens.
  • Cut the prosciutto slices into smaller sections and arrange over the top of the salad.

Notes

If you looking to apply a crunchy twist to this recipe, you can fry the prosciutto slices in hot 350F oil until they are crispy. You can then break up and sprinkle these crunchy prosciutto bits over the salad.
