Chia Seed Banana Pudding
This dessert recipe is easy to make, healthy, and delicious!
Ingredients
½
cup
chia seeds
3
overripe bananas,
mashed into a paste
2
cups
coconut milk
3
Tbsp
maple syrup
1
tsp
vanilla extract
¼
cup
toasted coconut flakes,
optional, as garnish
Instructions
Combine chia seeds with mashed bananas, coconut milk, maple syrup, and vanilla extract.
Stir and allow to rest in the fridge for 20 minutes.
After the mixture has rested for another 20 minutes, stir the contents again and place back in fridge.
After the mixture has rested for an additional 20 minutes, stir a final time and allow the mixture to set in place in the fridge overnight.
Serve with toasted coconut flakes, if desired.
Notes
This dessert stores well in the fridge for several days.
