Remove contents from link of blood sausage and place into nonstick pan.
Gently heat contents until hot, stirring to avoid any sticking.
When blood sausage is hot throughout, turn off heat.
Cut bread at an angle into oval-shaped slices 3/8” thick.
Drizzle slices with olive oil and toast in the oven at 375F on a sheet tray for 5 minutes, or until bread is warmed through and the exterior of each slice is gently crispy.
Remove bread from oven.
Spread a thin layer of blood sausage on top of each baked slice of bread.
Add thin rounds of soft goat cheese on top of the blood sausage.
Add walnuts on top of the goat cheese and blood sausage.
Drizzle lightly with honey.
Garnish with freshly sliced chives.
Serve warm.
