Using a non-stick skillet, scramble the eggs with salt and pepper. Set aside.
Lightly oil the pan, and bring it to medium heat.
Lightly toast the tortilla on one side.
Flip the tortilla, and sprinkle ¼ cup of cheese on top.
Follow with bacon and onion.
End with the last ¼ cup of cheese.
Add scrambled eggs.
Top with the 2nd tortilla, carefully flipping thewhole “sandwich” over so the 2nd side toasts.
Cut into quarters and enjoy with sour cream on the side.
