Soba Noodle Salad With Peanut Dressing

Ingredients

  • 1 package soba noodles
  • 3 cups purple cabbage shredded
  • 1/2 cup snow peas chopped
  • 1/2 cup match stick carrots
  • 1/2 cup red bell pepper thinly sliced
  • 2-3 green onoin chopped
  • fresh cilantro to taste
  • crushed peanuts for garnish
  • sesame seeds for garnish

Peanut Dressing

  • 5 tablespoons smooth peanut butter
  • 5 tablespoons water
  • 5 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 clove garlic minced
  • 1 tablespoon honey
  • 1 lime juiced
  • 3 tablespoons sriracha
  • 1/3 cup peanuts

Instructions

  • Cook soba noodles according to package directions.
  • Drain and rinse with cold water to stop cooking.
  • In a large bowl, combine cooked soba noodles, and sliced vegetables.
  • Place in refrigerator to chill while you prepare the dressing.
  • In a blender, put all the dressing ingredients, except the peanuts. Once the dressing is well combined, add the peanuts for a few seconds (this will keep some peanut chunks).
  • Drizzle over chilled noodle mixture and toss gently to coat. Serve immediately or refrigerate for 1 hour before serving.
  • Garnish with additional peanuts, sesame seeds, cilantro, and a lime wedge.
