Shrimp Quesadilla Recipe - The Perfect Weeknight Meal

Shrimp quesadillas are one of the best weeknight meals because they’re super easy to make and everyone can customize their plate to their liking! Try adding guacamole, salsa, beans, and corn so each person can have a great quesadilla with ingredients they love! This shrimp quesadilla recipe will become your new go-to!

Ingredients

  • 2 tablespoons olive oil
  • cooking spray
  • 1/2 medium onion diced
  • 1 red bell pepper seeded and chopped
  • 3 cloves garlic minced
  • 4 cups shrimp peeled and deveined
  • 2 tablespoons taco seasoning
  • 6-8 tortillas flour or corn, depending on your preference
  • 1-2 cups shredded cheese Mexican blend or cheddar
  • 2 tablespoons freshly chopped cilantro for garnish

Instructions

  • Heat your skillet on medium-high heat and add olive oil. Sautee your onions and garlic for a couple of minutes until soft and translucent. Add bell peppers and cook an additional 2 minutes.
  • Next, add your shrimp and season with taco seasoning.
  • Cook for about 4-5 minutes until pink!
  • Remove shrimp mixture and set aside. Clean your pan and spray with cooking spray.
  • Place tortilla on pan, over medium-low heat, add cheese and shrimp mixture. Be sure not to add too much or your quesadilla or it will fall apart!
  • After 2-3 minutes, fold the tortilla in half. Flip and let each side get golden brown.
  • Repeat for remaining tortillas.
  • Garnish with fresh cilantro.

Notes

We recommend serving these quesadillas with beans, corn, guacamole, and sour cream!
