Ingredients
1cupof rice
1canof chicken broth
1tablespoonolive oil
1medium white onionchopped
1small jalapeñoseeded and diced
1canof black beansrinsed and drained
1canof sweet cornrinsed and drained
1can diced tomatoes
1small canof green chilis
2glovesof garlicminced
salt and pepperto taste
red pepper flakes to taste, for spice
Instructions
Cook the rice in the chicken broth, following the package instructions.
When the rice is cooking, sautee the garlic in oil.
After 3-4 minutes add the diced onion. Cook until translucent.
Add the diced bell pepper and cook for 5-7 minutes. Remove and set aside.
When rice is done cooking, add the onion, garlic, pepper mixture.
Mix in the remaining diced and chopped vegetables and seasonings.
