Do you find yourself skipping breakfast or grabbing something unhealthy because you don’t have time to eat? These baked egg bites are the perfect solution! They’re so easy to make ahead and heat up in the morning. You can also add any vegetables, cheese, or protein you have in your fridge! Be sure to try these simple, healthy breakfast options that everyone will love!

Ingredients

  • 8 eggs
  • 1/2 cup of milk
  • cooking spray
  • salt and pepper to taste

Optional Add-Ins:

  • Protein of your choice bacon/turkey bacon cooked and crumbled, sausage cut into small pieces
  • 1 cup of shredded cheese of your choice
  • 1 cup of chopped up vegetables tomatoes, onions, peppers, spinach

Instructions

  • Preheat oven to 350 degrees F.
  • Spray a mini muffin tin with nonstick cooking spray.
  • In a large mixing bowl, crack your eggs and whisk. Whisk in milk.
  • Add in the desired add-ins.
  • Season with salt and pepper.
  • Bake until the egg bites puff up, about 15 minutes.
  • Enjoy right away or store in the fridge for 4-5 days!
