Garlic Soup

This garlic soup is delicate, flavorful, and incredibly easy to prepare. This soup is intentionally served at room temperature or slightly warmed, poured in bowls over a slice of toasted bread that has been drizzled with olive oil.

Ingredients

  • 1.5 cups water
  • 1 tsp salt
  • 4-8 garlic cloves
  • 1 Bay leaf
  • 2 Thyme sprigs
  • 1 egg yolk

Instructions

  • Boil the water, salt, garlic cloves, bay leaf, and thyme sprigs for 30 minutes, or until the whole garlic cloves are tender.
  • Remove the bay leaf and thyme sprigs from the soup and allow soup to begin to cool down.
  • Remove ¼ cup of the liquid and set aside to cool.
  • When the soup has cooled closer to room temperature, blend the ¼ cup of broth with the garlic cloves and the egg yolk.
  • Whisk this mixture back into your cooled soup, and serve on top of crusty bread drizzled with olive oil.
