If you’ve gone to a variety of social occasions, you’ve probably seen some type of green sauce. Examples include Green Goddes Dip and Magic Green Sauce. This recipe goes in the same direction but uses Tahini as a foundation. What is tahini? It is a butter spread made from ground sesame, oil, and sometimes salt. It’s a star element in many Middle Eastern dishes. And, believe it or not, it even makes its way into dessert.This recipe produces a savory, dynamic sauce with the traditional nutty flavor of tahini blended with herbs. The result is layers of fantastic flavor perfect as a topping for potatoes, pitas, rice, and grilled cauliflower just to name a few. If you’re not fond of the bitterness in Tahini, you add a little honey to your taste.
Ingredients
1/2cuplight of extra light olive oil
1/2cupwater
1/2cuptahini
1/4cupfresh cilantro
1/4cupfresh parsley
1clovegarlic
2teaspooonbasil
2tablespoonslemon juice
salt to taste
Instructions
Just toss everything into your blender (or food processor) and mix until everything is smooth
If you feel it’s a little runny, just add more tahini.
