Pad thai is one of the most popular dishes in Thailand, and it’s easy to see why! Traditionally, pad thai consists of stir-fried rice noodles with tofu, egg, green onions, bean sprouts, and crushed peanuts mixed in a delicious sweet and savory sauce. Pad thai can be eaten as an appetizer or side dish, but it’s so good that it makes for an excellent main course meal as well!
Ingredients
Stir Fry
1packageprotein of choice tofu, shrimp, or chicken
1/2white onoin chopped
2clovesgarlicminced
2green onoinschopped
2eggs
1cupof bean sprouts
1/3cupof chopped peanuts
3 tablespoonsof oil
add any other vegetable of choice we suggestwe suggest, sliced bell peppers and chopped broccoli
1packageof rice noodles
Sauce
1 1/2tablespoonsof tamarind
3tablespoonsof light brown sugar
2 tablespoonsof fish sauce
1tablespoonsof oyster sauce
squeeze of fresh lime
Instructions
Mix the sauce ingredients in a bowl, set aside.
In a wok or sautee pan, sautee the garlic and onion for a few minutes in oil. Add in the protein, cook for about 5 minutes. Add in the vegetables and cook for an additional 5 minutes.
Create a space in the pan and pour the 2 whisked eggs in. Scramble the eggs and incorporate them with the vegetables and protein.
Add the rice noodles (cooked according to the package).
Mix in the sauce, and cook for 2-3 minutes.
Add in chopped peanuts, green onion, and lime juice.
Serve and garnish with more peanuts and a lime wedge.
