The Best Breakfast Burrito Recipe

Breakfast burritos are the perfect thing to have on hand when you’re rushing to work in the morning and need something quick, filling, and portable to eat. You can fill them with whatever ingredients you like, but here’s one of our favorite recipes that will keep you going all morning long.

Ingredients

  • 1 package of bacon cooked and chopped
  • 4 medium potatoes cubed
  • 2 cups of your favorite salsa
  • 1/2 red onion diced
  • 1 large avocado
  • 1/3 cup of shredded cheese We suggest cheddar, pepper jack, or feta
  • 8 eggs
  • 2 tablespoons oil
  • salt and pepper to taste
  • 8 small tortillas

Instructions

  • Clean and cube potatoes. Season with salt and pepper and roast for 45 minutes at 350 degrees F.
  • In a medium skillet, heat oil over medium heat. Sautee pepper and onions until done, about 7 minutes. Set aside.
  • In a medium bowl, whisk together eggs and cheese, and season with salt and pepper. In a medium skillet, heat oil over medium heat and scramble eggs.
  • Lay tortillas out and start to assemble. Spread a thin layer of salsa on each tortilla. Then add eggs, cooked vegetables, potatoes, and bacon. Roll up the burrito.
  • Wrap burritos in tin foil and freeze to heat up later on or enjoy now. Serve with sliced avocado.

Notes

*To reheat burritos preheat oven to 350 degrees F and cook for about 10-12 minutes.
