Ingredients
- 1 red onion
- 1 white onion
- 1 Spanish onion
- 1 sweet onion
- 1 yellow onion
- 1 bunch of chives
- 1/2 stick butter
- 3 cups water (add more if needed)
- 1/4 cups rose wine
- 3 tablespoons beef stock
- 3 tablespoons worchestershire sauce
- french bread (sliced)
- provolone cheese (grated)
- 1 tablespoon garlic salt
- soft butter
Instructions
- Quarter all the onions.
- Put ¼ of the onions in the food processor and finely mince.
- Dice ¼ of each onion.
- Slice ¼ of each onion.
- Cut the last ¼ into strips.
- Melt the butter in a large stock pan.
- Add the onions and simmer on low.
- Stir regularly until the onions are evenly golden brown.
- Add water (it should cover the onions, if not add more).
- Add wine, stock, and Worcestershire.
- Stir.
- Turn the heat to a low setting, letting the soup simmer for 3 hours.
- Stir and taste test.
- Adjust your flavoring to personal tastes.
- You can also continue reducing the soup more for another hour.
- Let cool.
